A mild satisfying Herring salad with Pototatoes
500 g potatoes
2 medium to large slighly sour Apples
2 onions
1 half a jar of sour gherkins
2 tbsp cooking cream or joghurt
3 tbsp mayonnaise
2 tbsp apple vinegar
2 tbsp dill
1 tsp honey
pepper
salt
Prepare

- Peel and wash the potatoes, cook them roughly 20 minutes with some salt. They are ready when you can easily stick a fork in it without them falling apart.
- Peel the onions, wash them and cut them quite small.
- Wash the apples. Do not peel them (that is where the best in the apple is), do not grate them. take out the core, and cut the left overs in pieces about 1 cm.
- cut the gherkins in small pieces

Cut the herrings in pieces half a thumbs size. make sure to keep your thumbs though 🙂

Dressing

- Add the Mix the mayo and the cream carefully with a fork, until it is really creamy.
- Add the Dill, let it site for a while

put it all together

- Add the apples, the gherkins and the herring into a bowl
- add the apple vinegar, pepper and the gherkin brine
- add the cold potatoes
- add the dressing
- Add the honey to your taste
- mix it all carefully so the potatoes and the herring do not fall apart
Put into the cooler and let it sit for a few hours. tastes best the next day. Enjoy!
